In precision fermentation, a refined form of brewing takes place that multiplies microorganisms to make food ingredients and products instead of directly getting them from plant and animal sources. These microbes are genetically edited to synthesize certain proteins during fermentation. This fermentation method is now being leveraged to produce foods like cheese, meat, alt-milk, yogurt, and eggs that are high in terms of nutrition, taste, and texture.

Change Foods is one company that is tapping into this method for the production of milk casein, which is required for creating alt-cheese. The company is prioritizing the production of this animal-free cheese for two reasons. Firstly, among the greenhouse gas emissions of all foods, cheese comes second only to red meat. Secondly, it is the top-ranking food in freshwater withdrawals per kilo. Fermentation-sourced products can act as the mainstay of food security and future-proof the agricultural sector. Keeping in mind the benefits derived from precision fermentation, it can play a key role as an enabler of sustainable food systems.
