Dietary Emulsifiers Reduce Gut Benefits, Not Inflammation

In a randomized trial, emulsifiers reduced beneficial short-chain fatty acids and altered gut microbiota but did not increase inflammation or metabolic risk. Carrageenan increased gut permeability. An emulsifier-free diet lowered cholesterol. Results suggest limiting emulsifiers may support gut health.
