Oat-rich low-gluten diets raise circulating short-chain fatty acids without altering inflammation

An oat-rich low-gluten diet for six weeks raised fasting plasma short-chain fatty acids particularly butyrate compared with a rice-rich low-gluten diet in people with elevated cardiometabolic risk. The oat diet did not produce meaningful changes in fecal microbiome composition or inflammatory markers.
