A recent study highlights the promise of algae as a sustainable, nutritious protein source comparable to soy. In a randomized, controlled trial, 19 healthy Chinese males consumed noodle meals enriched with either nori or Chlorella vulgaris biomass/protein concentrate, alongside a soy protein control. The algae-enriched meals performed well in palatability, with nori and Chlorella outperforming soy in aftertaste. No significant differences were observed in glucose, insulin, or appetite markers, but algae demonstrated unique effects on triglycerides. This suggests algae’s potential as a sustainable alternative to traditional proteins with similar metabolic health benefits.
