The study evaluates the bioactivities of faba bean (Vicia faba) after simulated gastrointestinal digestion, comparing its effects with those of soybean and pea. The results showed that faba bean digestate exhibited strong antioxidant activity and the ability to inhibit oxidative stress, along with significant anti-inflammatory effects through modulation of key cellular pathways. In comparison to soybean and pea, faba bean demonstrated comparable or in some cases showed superior bioactivity, highlighting its richness in beneficial peptides released during digestion. These peptides are suggested to contribute to cellular protection and improved metabolic health by reducing oxidative damage and inflammatory responses.
