Mulberry leaf protein–derived bioactive peptides exert antidiabetic effects primarily by modulating key glucose-metabolic pathways and inhibiting carbohydrate-digesting enzymes. The identified peptides demonstrated strong α-glucosidase inhibitory activity, thereby delaying intestinal carbohydrate hydrolysis and reducing postprandial glucose absorption. Additionally, the peptides improved insulin sensitivity and glucose uptake, likely through activation of insulin-signaling pathways such as PI3K/Akt, leading to enhanced peripheral glucose utilization. Collectively, these mechanisms attenuate hyperglycemia and support metabolic homeostasis, highlighting mulberry leaf peptides as functional agents for glycemic regulation.
